Description

The Shotoh, or Japanese small knife, is perfect for precision tasks such as slicing small cuts of meat, fruits, or vegetables.

Its blade features a fine carbide steel core, known for its exceptional hardness, providing excellent edge retention and a precise initial sharpness. This core is wrapped in 48 layers of steel, creating a unique Damascus pattern on each blade.

A razor-sharp edge is achieved through the traditional Honbazuke process, which includes three steps: grinding, honing, and polishing. With no finger guard, the full length of the blade is usable.

To maintain its performance, hand wash the knife and sharpen it regularly with a whetstone. Always use a wooden cutting board to avoid dulling the blade.
