The double-bevel blade and Honbazuke sharpening give the knife its exceptional edge. Its authentic Japanese blade profile ensures that this 13 cm Shotoh is easy to handle and stays sharp over time.

Part of the MIYABI 6000MCT series, the blade features a hammered Tsuchime finish. The handle is crafted from premium cocobolo pakkawood with a smooth grain, enhanced by a decorative mosaic pin. It maintains its shape and is easy to care for.

Finely balanced for smooth, effortless cutting, the blade is made from micro-carbide powder steel layered between two additional layers of steel. The core reaches a hardness of approximately 63 Rockwell and undergoes special hardening processes, including ice-hardening at -196°C.

This enhances the blade’s stability, flexibility, durability, and strength, giving you a sharp, reliable knife for a wide range of kitchen tasks.
